Parmesan Biscuits

Ingredients:

  • 120g of Parmesan
  • 100g of butter
  • 150g of 00 flour
  • 1 egg
  • pepper to taste
  • sesame seeds to taste

Preparation:

Dough

1 Arrange the flour in a fountain shape, then add the grated parmesan and do the same, finally add the diced butter and 2 as soon as the dough has become uniform 3 roll it out with a rolling pin to a thickness of about 3-4 millimetres.

Drafting

4 At this point, use cookie cutters to cut out as many biscuits as possible from the rolled out pastry. 5 To detach them without ruining them, you can use a spatula. 6 Now arrange the biscuits on a baking tray covered with baking paper.

Finish

7 Brush one part of the biscuits with the egg white and the other with the yolk. 8 Sprinkle sesame seeds over the biscuits with the egg white, and grind some pepper over the ones with the yolk. Bake in a static oven preheated to 180°C for 12 minutes. Once baked 9 let the biscuits cool on a rack and serve them to your guests!

Advise

  • Use cold butter : Use butter just taken out of the refrigerator to avoid the dough being too soft.
  • A little flour when rolling out the pastry : it will help prevent the dough from sticking, but don't overdo it.
  • Touch them as little as possible : raw shortcrust biscuits are very delicate and sensitive to heat, touch them with your hands as little as possible to avoid ruining them.
